Condensed milk ratios, tea sourcing, and the decades-old shophouses that still do it best.
Thai iced tea is not one recipe. The orange colour, the exact sweetness, and how much the tea itself survives the dairy are decisions each shop makes, and the good ones have been making the same decision for forty years.
What is actually in the glass
The base is strong black tea, usually a Ceylon-style blend with added flavourings, brewed dark through a cloth filter. Then condensed milk for sweetness and body, evaporated milk or fresh milk poured over the top, and ice.
The orange is from the blend itself, not from the milk. A cha yen that arrives pale has been over-milked; one that arrives dark brown has been under-milked or brewed too long.
What separates a good one
Three things. The tea must be brewed strong enough to taste through the dairy — you should finish the glass still tasting tea, not sugar. The condensed milk should be measured, not poured freehand into a cup with no plan. And the ice must be fresh, because a cha yen sitting for ten minutes is a different, sadder drink.
The best versions are usually served in a plastic bag or a tall glass at a shophouse counter where the person making it has made ten thousand of them.
Where to look in Bangkok
Old Chinese-Thai coffee shops — the ones with marble tables, ceiling fans and a metal sock filter hanging behind the counter — are the reliable ones. Charoenkrung, Yaowarat and the lanes around Talat Noi have several that have been running for decades.
Fresh-market stalls are the other reliable category: a cart with a queue, a hand-lettered sign, and the same customers every morning.
Chain versions are consistent and sweeter, which is fine, but they are not what this drink is for.
Ordering like a local
Say cha yen for the standard sweet iced version. Cha dam yen is the same tea, iced, with no milk — sweeter than you expect and worth trying at least once. Wan noi means less sweet, and most shops will do it if you ask before they start pouring.
Drink it within a few minutes, not over an hour. The whole thing is designed to be finished before the ice wins.
